Raagi is the new age health food? Or was it already there and we have just started looking at it again. The health & fitness gang has made people go to newer or rather older horizons.  Raagi fits into the healthy breakfast category very easily. Anything Raagi is considered healthy.

It is lovely millet but not so easy to cook. I prefer using Raagi flour most of the time.  I like the dark colour it adds and  extremely very mild nutty flavour.

 

I made this in two ways today for myself I topped the pancake with some jaggery and powder of mixed nuts for daughter i topped it with chocolate sauce and mixed nuts.

Served 2 for each but 1 was good enough with are limited appetites. The reason i say this is that the you can alter the quantity in the recipe based on your preferences.

Raagi Pancake with jaggery and mixed nuts

Here goes the recipe

Raagi Pancakes

By Serves: 3 Prep Time: 5 mins Cooking Time: 15 mins

Ingredients

  • 1 cup raagi flour
  • 2 eggs
  • 1/2 cup milk (check consistency and adjust)
  • 4 tbsp sugar
  • Pinch of salt
  • Powdered Jaggery mixed with powder of nuts of your choice

Instructions

Beat the eggs in a mixing bowl

Add the sugar and mix well

Add the raagi flour

Mix well

Add the milk, mix well

Get it to a pouring consistency

Your batter is ready with this

Heat the non stick pan

Pour the batter on the hot pan

Add the jaggery and nuts on top (If you are later going to top it with chocolate sauce then do not put this jaggery)

Cook on a medium flame

Cover the pan cake while cooking

Once cooked flip over the pan cake (check by inserting a tooth pick, if it comes out clean its done)

When cooked well on both sides, Your pan cake is ready.

Notes

Serve it with chocolate sauce and nuts
