Interestingly, this was a recipe created originally by a club in Mumbai for a person who was not allowed to eat eggs or any non-vegetarian food at home.

It’s a simple yet different recipe and the more I like the story behind the recipe, I also like the recipe and the taste of this combination. It’s a nice spicy sandwich catering to the palettes of people from India.

Eggs Kejriwal Recipe

Ingredients

  • 4slices of Brown bread
  • 2 eggs
  • 1 medium-sized onion, finely chopped
  • 1 small tomato, finely chopped
  • 2 green chilies finely chopped
  • A pinch of red chili powder
  • ½ tsp black pepper powder
  • 2 slices of cheese
  • Salt to taste
  • 1 tbsp oil
  • Salt to taste

Instructions

In a frying pan, add some oil, let it heat up a bit

Add the onions & chilies

Cook till transparent

Add the finely chopped tomatoes

Cook till a little softer.

Add salt and black pepper powder, mix and keep aside.

In the same pan, toast the slices of bread with slices of cheese, so that the cheese melts and holds on to the bread

Take it down into the plate

Layer the slices with the onion mix

Take another frying pan and pour some oil.

When hot, break an egg into the oil to make a sunny side up

Cook just enough that the yolk is still runny.

Slide the egg onto the onion mixture on the slice

Sprinkle salt and red chili powder

Cover with another slice of bread.

Notes

Serve it with a nice hot Nescafe. An ideal, spicy breakfast for a rainy morning!
